Sapid and Marvelous Dessert “Künefe”
It is believed that Künefe has its origins in Syria and Lebanon. In Turkey its homeland is South Eastern region especially Hatay.
Künefe is kind of a dessert which is served hot and it is made with kadayıf (oven baked shredded pastry with pistachio filling in thick syrup angel’s hair dessert) and cheese. It can be made differently in Şanlıurfa, Hatay and Mersin.
Besides tel kadayıf, people may also use kadayıf which is toughened with semolina. People are commonly used Hatay cheese, curd cheese, Antep cheese, Urfa cheese because these are closer to raw milk. Using a fresh cheese is important and hard to keep these cheese fresh and these are not easily accessible. Because of this, in simplified home recipe’s string cheese is used.
Presentation of Künefe
Künefe is served hot or warmish and this warmth can be change. For instance, in Mersin künefe is baked on a big tray and for serving it is put in a oven that works with high temperature. When it serves, it is cut shape of rectangular and put on plate. That kind of a presentation keep warm of künefe and because of this preparation, künefe is generally served warmish in Mersin. But in Hatay, künefe always ready to bake and when cooker receive an order directly put it oven and it is served. That presentation keep hot of künefe. That is to say preparation is effected künefe’s warmth.
Kind of dried fruits as beaten pistachio, walnut and nut can be dispersed on baked künefe. But mostly pistachio is used for it.
Almost every presentation, künefe comes to table with a glass of water because of künefe’s intensive sherbet. Water is balanced high sugar level in künefe so heat level decreases. Everybody should eats künefe one more time of theirs life!
